Es Teler




Jackfruit + avocado + grated ice + condensed milk
Materials :
450 coconut mink ml
100 sand sugar gr
1 / 2 salt sdt
2 screw pine leaf lbr
Avocado, crosscut of cubical
Matured jackfruit split 3 every its fruit
Young coconut, taken only its flesh
Black cincau, cut cubical
Red syrup
Ices plane down

Way of Making
- Decant the coconut mink into pan, enhancing sugar, last salt cook till coconut mink boil
- Swirl once in a while so that the coconut mink do not break
- Enhancing screw pine leaf of yg have its periphery rip
- If have matured, lift and made cool
- Enhancing syrup into coconut mink which have been chilled to swirl to flatten
- Decant all fruit which have been prepared
- If less water, can be added by matured water, is likely accomodated
- If there is can be presented with ice plane down and sprinkled meagrely sweet heavy cream and syrup

Beef Rendang




Beef Rendang:

  • 1 pound of round top or stew meat, cut into 2" cubes
  • 1 cinnamon stick
  • 2 cloves
  • 2 star anise
  • 2 cardamon pods (optional)
  • 5 kaffir leaves, thinly sliced
  • 1 can of coconut milk (about 400 ml)
  • 1 cup of water
  • 1 tbsp of brown sugar
  • Salt to taste

Rendang Paste: Blend the following ingredients until smooth:

  • 10 shallots or 1 small brown onion
  • 5 cloves of garlic
  • 1 thumb-size (about 2") galangal
  • 1 thumb-size  (about 2")ginger
  • 3 stalks of lemon grass (use only bottom white part)
  • 10 to 12 dried chili pods (soaked in warm water and then seeded) or 1 to 2 tbsps (if you like it spicy) of chili flakes

Directions

  1. Heat oil in a stew pot and add blended paste, cinnamon, cloves, cardamom and fry until fragrant.
  2. Add beef, sugar and salt and stir-fry until meat is evenly coated with paste.
  3. Add coconut milk and 1 cup of water and bring it to a boil.
  4. Lower heat and allow to simmer until meat is fairly dry and tender (about 1 to 1 and half hours). Stir occasionally.
  5. Season with extra salt and sugar if needed.
  6. Add sliced kaffir leaves for a fresh citrusy flavor.
  7. Dish out and serve.

Ingredients
- 5 chicken eggs
Spice Paste
- 10 red chillies (or less, depend on your taste)
- 6 shallots
- 4 cloves of garlic
- 1 teaspoon tamarind
- Salt and sugar to taste
Directions
1. Boil the eggs, peeled, fried and set aside
2. Grind or blend the spice paste, then sauté it until fragrance. Add the tamarind and a little of water.
3. Add the eggs, mix with the sauce and continue cooking for couple of minutes.

Corn Bakwan ( bakwan jagung )



Main ingredients :

  • Corn beads (its ok if u use the frozen one tho..)
  • Flour
  • Egg
  • Water
  • Onion
Additional ingredients :
  • Shrimp
  • Leek
  • Carrot
  • Chicken
  • any kind of vegetables (except the watery one, such as cucumber, tomato, etc..)
Seasonings : 
  • Salt
  • Pepper
Others:
  • Cooking oil
  • Soup spoon
  • bowl
  • tissue or plain paper
How to make it :
  1. If you buy corn (not corn beads), so you must take corn beads one by one, or u can use knife to peel beads from corn.
  2. Cut Onion and the other additional ingredients.
  3. Put flour and egg(s) in a bowl and mix it until it become a thick batter. You can add water if the batter is too thick..but dont make it too watery..(if it has become too watery, you can add flour again).
  4. Put corn beads and ② into that batter (portion of corn beads have to be more than batter).
  5. Pour salt and pepper into ④ reasonably and mix.
  6. Heat a lot of cooking oil with medium fire.
  7. After the cooking oil has become hot, take ⑤ in small amount (you can use soup spoon to measure the amount)  and put it in ⑥.
  8. Deep fry ⑦ with medium or small fire until it become light brown.
  9. After it become light brown, put it on tissue or plain paper, so ⑧ become not too oily.
  10. Put it for a while until it not become too hot.
  11. 召し上がり!!! (EAT!!!), more delicious with tomato or chili sauce..

Fried Banana



Ingredients:
  • 1 ripe black-skinned plantain or 4 small finger banana (make sure that the banana is sweet)
  • 1 egg
  • 1 tsp. sugar
  • 6 Tbs. flour
  • water
  • a pinch of salt
  • vegetable oil for deep frying
Instructions:
  • Place flour in a deep mixing bowl. Make a well in the middle of the flour, and add egg, sugar and salt. Add water little by little. Whisk vigorously until batter is evenly smooth for coating and not too thin. If it is too thin, add more flour.
  • Peel plantain or banana and cut in half lengthwise and then cut again with 4-inch width. Dip into batter to coat generously.
  • Heat oil in a wok or deep fryer until moderately hot. Place coated plantain or banana in the wok or deep fryer and fry slowly until golden brown and crispy. This usually take approximately 10-15 minutes. Remove bananas from oil, drain on paper napkins and dry well.
  • Serve while still warm
Makes 4 servings.

Tangkuban Perahu

Mount Tangkuban Perahu located in Lembang, 30 km north of Bandung, the provincial capital of West Java, Indonesia. Actually, Tangkuban Perahu is an active volcano. Named by Tangkuban Perahu in Sundanese dialect, because Tangkuban Perahu shape resembles an upturned boat. There are interesting legends associated with this fascinating region.
One time ago in west java there are Dayang Sumbi, a beautiful woman who cast away her son Sangkuriang for disobedience. Sangkuriang blessed eternal power by the god. After long time in exile, Sangkuriang decided to come back homes. Becase Sangkuriang grew up into a handsome man, so they don’t recognize each other. Unwittingly Sangkuriang fell in love with Dayang Sumbi and intend to marry.
But, eventually Dayang Sumbi recognize Sangkuriang because his birthmark on his body. To prevent the marriage with his son, Dayang Sumbi asked Sangkuriang to build a dam on the river Citarum as well as making a big boat as a condition of marriage. And both must be completed before sunrise.
Sangkuriang undertakes request by Dayang Sumbi and called Buta Hijo(a mythical ogre-green giant) to help him.  Looking at the task she gave almost done, so Dayang Sumbi asked his assistants to spread red silk fabric in the eastern city as the impression that the sun will rise. Sangkuriang cheated and kicked the dam and the unfinished boat, resulting in flooding and the creation of Tangkuban Perahu from the hull.

Dunia Fantasi in Jakarta



Amusement park is the generic term used to refer to a collection of rides and other entertainment attractions assembled together in a large area to entertain a fairly large group of people belonging to different age groups. An amusement park is more elaborate affair than a usual city park or playground. The temporary at times even annual, amusement park with mobile rides is known as funfair or carnival. A more specific category of amusement park is the theme park and these are the highest quality form of an amusement park. Theme parks use architecture, signage, landscaping to imbibe a feeling of getting transcended to a different place or time among the visitors. Theme parks are often comprised of various lands or sections that contribute together in depicting a particular style. Occasionally amusement parks have rides with distinct themes or additional design elements.

Beef Rica Rica




INGREDIENTS :
· 500 gr beef, wash off and sliced rectangular with thick + ½ cm
· 250 coconut milk, made of ¼ coconut fruit
· 3 tbs cooking oil, for saute

GROUND SEASONING :
• 20 red curly chilies
• 4 cloves of garlic, peel and chopped
• 6 cloves of onion, peel and chopped
• 2 cm alpina galangal root, peeled and grated it
• 2 cm ginger root, peeled and grated it
• ¾ tsp sea salt (or to taste)
• ¼ tsp broth powder (if you like it, option)

ANOTHER SEASONING :
• 2 stalks lemongrass, bruised
• 1 bay leaf
• 1 tomato, cut in 8 pieces
METHOD :
1. Use mortal and pestel or food prosessor, grind all ground seasoning ingredients finely.
2. Preheat 3 tbsp cooking oil, saute ground seasoning until becames fragrant, add lemongrass and bay leaf, saute on until becames fragrant.
3. Put the sliced beef and sliced tomatoes into saute, stir frequently the beef becames half-cook.
4. Pour coconut milk, stir continuously and cook on until its tender and its saute used up.
5. Removed. And, beef tica-rica ready to serve.

Madonese Style Grilled Chicken

This speciality comes from Manado, North Sulawesi. Rica means chilli in local language. This region is well-known as their delicious spicy food.





Ingredients
- 1 whole chicken or 1 kg chicken, cut into 4 or 6 small pieces
- 1-2 tablespoons lime juice
- 2 small fresh tomatoes, cut into small pieces
- 2 Fresh kaffir lime leaves 
















- 1 stalk of lemongrass ( sereh / serai ), take the white part only
- Salt to taste
Spice Paste
- 10 red chillies
- 5 bird's eyes chillies
- 5 shallots or 1 small red onion
- 6 cloves of garlic
- 3 teaspoons grated ginger
Directions
1. Marinate the chicken with salt and lime juice and leave them for 15 minutes.
2. Heat 2 tablespoons vegetables oil in a wok over medium heat and sauté the spice paste until fragrant then add the tomatoes, kaffir lime leaves, lemongrass and around 200 water. Add the chicken and cook half-done and the spice absorbed. Set aside.
3. Grill the chicken on a barbeque grill or in an oven over moderate heat until done. When it's done serve with the rest of sauce.
4. Serving suggestion: can be eaten with plain rice (nasi putih), cooked vegetables with grated coconut (urap-urap sayur),  crispy rice flour cracker (rempeyek)

Buddhist

Buddhism is the second oldest religion in Indonesia, just after Hinduism. Before the arrival of these two religions, people believed that nature had supernormal power. Trees and stones were worshipped as sacred object, where beings with supernormal power reside. Many Buddhist temples were built and Buddhist texts were inscribed on the stones tablets (called prasasti) during this time. The best known of these temples is Borobudur one of the Seven Wonders of the World. Borobudur represents three views of the universe according to the Indian Vajrayana tradition. The apex of the structure is a stupa, which represents the concept of Emptiness or Sunnata. Every year on the full moon in May, the Vesak celebration (called Tri Suci Waisak in Bahasa Indonesian), commemorating the birth, enlightenment, and passing away of the Buddha is held at Borobudur. Buddhism is one of five religions recognized by the Indonesian government, besides Islam, Catholic, Protestant, and Hinduism. According to a census conducted in 1990, the majority of the population is Moslem (around 87%). About 1.8 million people (which was slightly more than 1% of the population) are Buddhism. 



Moslem

Based on the 2000 census, approximately 86.1% were Moslem ( Islam ).Indonesia is the world's most populous Muslim-majority country. Islam was introduced to Indonesia in the 14th century. Coming from Gujarat, India, Islam spread through the west coast of Sumatra and then developed to the east in Java. This period also saw kingdoms established but this time with Muslim influence, namely Demak, Panjang, Mataram and Banten. By the end of the fifteenth century, 20 Islam-based kingdoms had been established, reflecting the domination of Islam in Indonesia.


Ramadhan

To understand the significance of Lebaran, an understanding about the fasting month of Ramadhan is important. During the month of Ramadhan, Muslims must refrain from eating, drinking, smoking, marital relations or getting angry during the daylight hours. In addition, those fasting are supposed to refrain from bad habits - lying, getting angry, using bad language as well as to be more diligent in prayer and give to charities. It is believe that fasting heightens spirituality and develops self-control.
The fast begins in the morning just before sunrise, at Imsak, and is broken at maghrib which falls at sunset. Fasting during the month of Ramadhan is one of the five pillars of Islam and an obligation for devout Muslims.
Those who are expected to fast include: adults (defined as those who have reached the age of puberty) and those who are sane. Those who are not expected to fast include: children, women having their period, travelers, the sick, those with long-term illnesses, pregnant or breastfeeding women and the mentally ill.
The faithful who fast awaken early in the morning to have a meal before subuh. In order to awaken the faithful, the call to prayer is sounded from neighborhood mosques. In addition, groups of young boys walk around neighborhoods beating on drums and other noise makers to awaken the faithful.
The breaking of the fast at sunset is a very social occasion for which special foods are prepared for gatherings with family or friends. Upon hearing the sound of the bedug drum on the television or the call to prayer from the neighborhood mosque at sunset, the faithful know it's time to break their fast, or buka puasa. This is usually done with a very sweet drink and sweet snacks. Maghrib prayers are made before a full meal is served. Taraweh prayers are held in neighborhood mosques and at gatherings every evening at about 7:30 p.m. These prayers are not compulsory, but they are enjoyed by many.
The schedule for Imsak and Maghrib is posted in major newspapers and on the television throughout Indonesia, as well as published in handouts by major religious organizations.
While it is expected that people will keep to their normal activities during the fast, needless to say the lack of liquid and food during the day and the unusual sleep and meal schedule soon take their toll. After the first week you may see that sleep and food deprivation cause those fasting to have reduced energy levels as well as finding it more difficult to concentrate on tasks.



Idul Fitri.


At the end of the month of Ramadhan and its special religious observance is the Eid holiday, called Idul Fitri or Lebaran in Indonesia. In Indonesia, this is the time when Muslims visit their family and friends to ask for forgiveness for any wrongs they have committed in the previous year. They express this wish in the phrase “Mohon Maaf Lahir Batin” which means "forgive me from the bottom of my heart/soul for my wrongdoings in the past year". A traditional Arabic (Muslim) greeting for the Eid celebrations is also commonly used in Indonesia "Minal Aidin Wal Fa Idzin", which is expressed upon meeting friends and family during the festive days. Traditional foods are consumed, family and friends gather to ask forgiveness and exchange greetings, new clothing is worn, children receive gifts of money and visits are made to recreational parks -- all to celebrate the successful completion of the fasting month. On Java, prior to the start of the fasting month (but not during it), visits are made to the graves of family ancestors (nyekar) to pay respects, clean the grave and leave flowers, causing major traffic jams near all major cemeteries.
Idul Fitri begins with mass prayer gatherings early in the morning at mosques, open fields, parks and on major streets. It is an amazing sight to see rows of hundreds of Muslim women all dressed in their mukena (white, head-to-toe prayer gowns) performing the synchronized prayer ritual. Muslim men tend to wear sarong, traditional shirts and peci hats to Idul Fitri morning prayers. On the walk home from the mass prayers, quick visits are made to friends in the neighborhood to ask for forgiveness.
Following the morning prayers and neighborhood visits, visits are made to close family members around town. Family members go to their parents first and then to the most senior relative's house (oldest person in the family) to “Mohon Maaf ...” with family members. Then depending on your age/status in the family, you visit aunts and uncles homes to do the same. At each house drinks and cookies or snacks are served, and since it is very impolite to refuse the food, by the end of the day you are so full you can hardly move. These customs may entail several days of visiting relatives and often there will be a gathering of family members at the senior-most relative's house.
Employees may also visit the homes of their senior bosses in the company or critical business colleagues and government officials to "Mohon Maaf ... " after their family visits are completed. In Jakarta, these customs entail days and days of visiting relatives and colleagues resulting in a great time of family reunions and upset to normal working/living schedules. Many people also take the opportunity of the Lebaran holiday to visit recreational parks.
While gathering with family, it is customary for the adults to give the young children some money ... they may meet you at the door shaking their wallets! It is also customary to distribute money to children in the poor neighborhoods around your home, Rp 1,000 (or more) per child will bring huge smiles to their faces!
In Jakarta neighborhoods there may also be organized fun and games sponsored by local businesses ... including climbing a greased pole to try to get to the prizes on the top called panjat pinang. A fun site to see!








Strongly held traditions to visit family at this time necessitate the exodus of and estimated 2.24 million (2010 figures) people from Jakarta alone, as well as additional millions from other urban centers, to rural villages and hometowns for the Lebaran holiday. The logistics of this exodus cause headaches for the government each year. During this period the streets in Jakarta are nearly empty as the population decreases by nearly one third. The hardships and inconveniences endured by the travelers in overcrowded buses, trains and cars is unbelievable, yet they feel that this is a small price to pay to spend the holidays with their family and friends. Traditionally these urban dwellers come bearing gifts or money earned during the previous year for their family.
They often return from the exodus accompanied by relatives and friends looking for work in the cities, furthering the pressures of urbanization. The government attempts to prevent the “socially undesirable” such as beggars, vagrants and others from migrating to the cites, but the task is overwhelming.
During the weeks after Lebaran many groups hold halal bilhalal gatherings where employees from a company, friends, colleagues or members of an organization gather to share a meal and ask each other's forgiveness. Non-Muslims are often invited to participate in these festive gatherings also.

Various Traditions Associated with Ramadhan and Lebaran

Bedug Lebaran The traditional bedug drums are beat at maghrib to notify the faithful that it is time to break the fast. Starting on the evening of the last day of Ramadhan and continuing throughout the night and into the following day, the bedug are also beaten in the takbiran celebrations either in stationary locations, or in parades through the streets. Takbiran is the prayer and celebration heralding the Idul Fitri holiday. Loud and boisterous parades and celebrations are held throughout the entire nation, which includes drum beating accompanied by amplified prayer and lively Islamic music.






Ketupat Traditionally eaten at Lebaran, the rhomboid-shaped ketupat casing is made of young coconut frond leaves that are still light green in color. Intricately woven by nimble fingered experts who can complete the weaving in 10 seconds, they are sold to the public at pasar (traditional markets) in bunches. The ketupat are filled with uncooked rice then steamed and left to cool before serving. The coconut leaf casing gives a unique flavor to the rice, one always associated with Lebaran. The ketupat is cut open, removed from the casing and cut into small chunks, then served with various accompanying vegetable and meat dishes (opor and sambal goreng), often cooked in spicy coconut milk.




Mudik The term for the exodus of millions of people from the urban centers to the villages in order to celebrate the Idul Fitri holiday with family and friends in the village. In 2009 government estimated the movement of people around the archipelago at 16,3 million people! This is a strongly held tradition and travelers happily endure a lot of hardships and inconveniences in overcrowded cars, buses and trains with seasonally inflated prices.




Takbiran The prayer celebration on the evening of the last day of Ramadhan, to herald in the Idul Fitri holiday. Chants are praised to Allah, drums are beat endlessly, dances, songs, religious prayers and sermons are given in public displays of excitement and praise.
